A simple yet, delicious and healthy recipe- zucchini and chana dal recipe are full of nutrients and fiber, this dish is easy to make and good for everyone in the family as it is high in protein. When you are feeling lazy to cook but yet want everyone in family palatable, try this one , you will be amazed. This can be served with roti, paratha or steamed rice.

2 medium zucchini (courgettes)
1/2 cup chana dal (split Bengal grams)
1 small onion chopped
1 tsp ginger garlic paste
1/2 tsp red chilli powder
1/2 tsp turmeric powder
1/4 tsp roasted cumin powder
1/4 tsp black pepper powder
Pinch whole spice powder (garam masala powder)
For Mix of whole spice
2 green cardamom,
2 cloves
1 inch cinnamon stick,
1/2 tsp cumin seeds
as requried Fresh coriander leaves
2 tbsp vegetable oil
as per taste Salt
Steps
1. Wash and soak chana dal for 10 min, wash, peel the Zucchini and cut in 1-inch pieces.
2. In a pressure cooker add oil and heat up then add whole spice when it starts crackle add chopped onion and fry till light golden brown then add ginger garlic paste sauté for 2 minutes now add chili, turmeric, black pepper, cumin powder and keep stir till oil separates.
3. Later add chana dal and salt mix it well, after 5 minutes add zucchini and stir well. add 2 cups of water and close the cooker lid completely.
4. Allow 3 whistles on a medium heat/flame and turn off the gas. add chopped coriander leaves and sprinkle a pinch of garam masala powder once the cooker cools down.
5. Delicious, healthy zucchini chana dal is ready to serve with hot roti, paratha, or steamed rice. I have served with paratha and drizzled one spoon of ghee on my bowl.
